I am gonna put my stock back on and remove my 18" rims,
so when I put on the stock wheels do I need an alignment and also the opposite situation (stock to rims)

I am gonna do it myself meaning jack up the car and replace one wheel at a time
(is that ok or should I have the garage do it on a lift)

Do it yourself. No need for alignment unless you did susp work, tires wearing uneven, steering wheel is crooked, or car is pulling.

When I got my rims they had to be balanced couple of times before getting it right (smooth ride)

So next spring or whenever I go from stock to aftermarket rims do I need to get them balanced again?

You shouldn't. I'd just put them back on and rebalance them only if you have vibration problems.
