Top Gear's convertible Espace triggered the idea. Body on frame is ideal since the frame reinforces the body when the top comes off. There were two body on frame minivans sold in the US, the Aerostar and the Astro/Safari. As a Ford guy, I looked to the Aerstar first.

Now for the more minor details. The Espace Top gear used had four swinging doors vs the sliding door on the Aerostar. I wasn't sure where the sliders for the door were located. I knew there was one a few inches below the window line, but wasn't sure if the second one was at the top or bottom. If it were at the top, the sliding door would need to be welded shut, or heavily modified to make it work. The second slider is at the bottom, so the door mechanism is unaffected by cutting the top off. The rear hatch would need to be cut and welded in place, but that's a minor issue.

Creating a top is a completely seperate issue, but you don't cut the roof off a minivan unless you plan to drive it top down.
