Did you see when the driver was jerking the wheel "excessively" around some of the corners? That's a technique I've never seen - if he just drove turning the wheel smoothly then the car would understeer, correct? So the "over-turning" makes the rubber bite and jerk the car into the turn? Neat.

The wheel jerking was catching small slides. The car was starting to oversteer, so he had to countersteer and then return back to steering around the corner. The sliding was very small and the corrections very quick, so it wasn't obvious in vid, except for the steering inputs.

Ohhh - that's interesting. What about this:
If I was in teh coug and I was approaching a left corner, and I entered it a little too fast, the car would understeer and begin to veer off the right side of the road. To counter that, I should turn the wheel right to catch the slide, and then turn back left to exit/continue the turn, correct? In this case, it was a RWD vehicle so the oversteer was due to too much acceleration or the inertia of the back pushing around the corner...so just like in the above example the counter steer was counter-intuitive but allowed for the directional rubber to grip again. Anyone know of some general technique forums or a good website that outlines the material covered in a typical driver's course?

For oversteer, you countersteer to correct. If it is throttle induced oversteer in a RWD car, you would also lift off the throttle (gentle lift, an abrupt one can make it worse). In a FWD or AWD car accelerating can also help reduce oversteer, but this depends on the situation.
For understeer, generally the way to correct is to let off the throttle and slow down until it stops pushing. If you end up in terminal understeer (extreme understeer case) you may need to reduce the steering input, but you don't actually countersteer. Not sure about sites on driving technique, but I'm sure there are several out there. Most of what I've learned came form autocrossing and the novice course offered by the local SCCA region.
