I got a replacement mirror assembly but it has a diff color cap than mine... how do i remove the caps?

pull the mirror glass straight out and once its unsnapped you will see the 2 prongs under the mirror cap that you need to press in so it snaps off.

I love you crispy... the glass just pulls right off?... suggested tool(s) for this?

yes, adjust the mirror so you can get your fingers in the crack it makes and gently pull twards you.. there is a peg there that the backing plate sits on.. make sure you notice the wiring that plugs in and out of the back too -- disconnect that and then look inside and you will see the 2 prongs you need to press in to pop it off.
