Ok.. I had the MAF sensor unhooked for about 2 weeks ( yes i know bad move, my buddy already chewed me out) Could that possibly be why the car shut off, as in a safe mode? and also Advanced Auto said my Alt was bad because it was at 10.6 volts while the car was off? what is normal volts for our cars

if the car is off then they are reading the voltage of the battery.
If you disonnect the battery while the car is running and the car shuts off then your alt is bad.
As for your MAF, yes your ECU will hate you for that and make you run in safe mode. So reconnect the MAF, and pull the negative battery terminal for 10 mins and turn the parking lights on. Then turn the parking lights off and reconnect the ground and start your car. Everything should hopefully be ok. (aside from battery/alt related issues)
