I am planning on doing some weight reduction including getting racing seats. I thought I might as well go all out and do the racing harnesses as well. My question is what can I mount the harness to? I have a rear strut bar and no back seat, so can I just mount them to that? I'm 6'1" and 170lb so I dont take a lot to keep in one place. Or would a better choice be to have a harness bar? If so, where can I get one of those?

Depends on what kind of rear STB and what it's made out of. Mirko himself said that you could use his STB as a harness bar as well, so I would assume you could probably use the ST200. Anything else, not sure.

Otherwise, just get a harness bar.

the passenger side of my car has the harness screwed down to two big torx bolts where the stock rear seatbelts go. Crispy has a thing that bolts to top of the rear seatbelt that acts as an extension for the harness

I have Schroth Ralleye 3 harnesses.. they use your existing grade 8 bolt on the c-pillar and have a detatchable tail so you can flip the seat forward and get in the back seat area

I have my 4 pt looped over the ST200 bar and it then bolts to the floor bolts of the ST200 bar.

Stangkiller makes harness bars yes. Pictures are in the for sale section. I won't have pictures of mine installed for a while.
