It's almost insane of how long it takes, can somebody explain this ?

It's an emissions measure, put there to burn off fuel. It is controlled by the Idle Air Control Valve. You can partially block off the IACV hose to make it come down quicker.

this is an old post called "throttle hang fix". It involves drilling a hole approx. 3/16" in diameter(give or take) in a 1/2" copper cap(local plumbing supplier) and putting it in the one hose coming off the air intake tube. this tricks the car into thinking that there is less air coming in than there really is, thus giving you a faster throttle down or in other words more engine brake. get 3 or 4 caps and drill different size holes to see what you like best. too small a hole and your engine will stall out. i will try to find the old post.

Isn't some of it do to the heavy flywheel though too. I mean it weighs what.. 22lbs!

Note some people that are very familiar with this engine recommend against this "fix". There's nothing wrong with the engine; it's designed to do that. In other words, you're not fixing a problem but altering its normal operation. (Do a search on "throttle hang" and I'm sure you'll come across many threads where it's argued in detail, so there's no point in arguing it yet again.)

Well, there's throttle hang, and then there's "OMG MY IACV IS DYING" throttle hang. The latter is WAY worse and may be punctuated with high idling, as well.

Normal throttle hang isn't annoying. Dying IACV throttle hang is.

I experianced this today after a long drive. How high is normal throtle hang? mine stops at 3000 rpm. Goes down eventually, doesn't take too long. Just wondering

I feel like a newb, but the autos don't have a flywheel. They have a flexplate, correct? Same thing.
