Does anyone know why a cat might just suddenly get packed with carbon, i mean to the point where the car won't run.

Yes. If it's the main cat, it's usually because your rear bank precat has failed (due to running too rich in the rear bank) and turned into chunks from exhaust pressure, then blown into the main cat and clogged it up as well.

Gut your precats, live a happier life.

Did you pull the cat off and look at it? Is it completely blocked? As stated above your precats may be falling apart. Gut them or get headers.

i pulled my main cat off and blew all that crap out, i didnt really notice any difference tho, sound or performance. this is why i was wondering if the pre cats should be gutted to, and whats gutting the precats do for backpressure.....or gas milage

yea but i drive alot for work, on a daily basis, whats your gas milage like?

Its great! Went up after i did that whole install. I also replace the two up steam O2 sensors too which i bet helped. If i drive normal: shift at 3K and do 70 on the highway i get 26-28mpg.
