Got my Euro buttons to the installer, and he said we need to wire in a "Holding Relay". Anyone know how this is wired? He said he has an idea, and is waiting to hear back from Autopage about it. But, anyone on here know how this is done?

The switches you are using are Momentary. They only turn something on as long as you hold the button. What they are talking about is there are relays out there (I have yet to use them) that when they see a momentary hit they turn a circuit on and hold it on. Then when they see another momemtary hit they turn the circuit off and hold it off.
The only other way, that I can think of, is to create a microcontroller circuit to do this. (Huge pain)

They are usually referred to as Latching Relays.
