The only way to test this is to bypass the turbo and disconnecting it will take too long. I know when the car was NA, it ran great temp wise. The radiator is brand new and the block was hot tanked when I had it at the machine shop when they fitted the pistons/rods/bearings, so I'm 100% sure it's not the cooling system itself, but the lack of cool air through it.
